« Le goût d’un Terroir »

The colour is a pale yellow, slightly hazy. The nose is striking, with notes of butter-roasted apple, apricot and smoke, and a faint hint of resin (pine needle). The palate is sleek and taut without being rigid, wrapped in a rich, pulpy, fruit-driven texture of impressive density. Yet there is no heaviness, this is all about sensual indulgence. The finish takes the intensity up another notch: powerful and chewy, without any tannic astringency. Here again, sheer pleasure prevails, with the fruity, buttery, smoky notes from the nose returning with an intensity that never fades, it simply hits you square between the eyes. Ce blanc de gastronomie peut faire face à de nombreux plats sophistiqués. Son gras et sa minéralité s’accordent à merveille avec des sauces à la truffe blanche. Sa matière lui permet aussi de s’allier parfaitement avec des plats épicés comme des escalopes de poulets au curry.

Vinification

Six-day skin maceration at 14°C (destemmed and crushed). Only the free-run juice is selected, then fermented in foudres, terracotta amphorae and stoneware. Ageing continues in the same vessels without racking. Bottled after 10 months with no fining or filtration.
