« Fraîcheur et Finesse »

This wine has an atypical nose, with little of the typical Sauvignon character. It reveals toasty, almost buttery notes with a light grilled edge, a testament to its lees ageing. Dig a little deeper and you'll find floral and fruity notes of peach and citrus. On the palate, its refreshing liveliness is reminiscent of grapefruit, bringing forward floral aromas such as honeysuckle and wisteria. It is a striking balance of freshness, richness and aromatics. A température fraîche mais non glacée (9-11°C), il se mariera parfaitement avec coquillages, fruits de mer et salades. Excellent compagnon des poissons fumés, grillés ou en sauce, il sera aussi idéal pour une occasion simple et conviviale comme l’apéritif.

Vinification

Direct pressing, cold settling. Fermentation with indigenous yeasts (as with all our wines) to preserve the character and originality of our terroirs. Aged in tank on fine lees for a short period, protected from air. This wine is neither fined nor filtered — it is a living wine that will continue to evolve in the bottle.
