Hécate
« Mystique et Envoûtante »
This cuvée reveals a complex nose with a broad aromatic palette, ranging from ripe fruit to roasted notes tinged with a subtle hint of chocolate. The generous palate stays true to the nose, with supple tannins. Black cherry and liquorice dominate, while the finish is lifted by its flint terroir, leaving a touch of freshness that beckons another glass. Hécate will cast its spell on you alongside rich, saucy dishes, a traditional Boeuf Bourguignon, an exotic date and turnip tagine, or braised pork cheeks with carrots and chanterelles. If possible, decant for an hour before tasting. It can also be cellared for seven to ten years.
Vinification
A gentle, infusion-like maceration lasting three to four weeks. Aged for 12 months in 600-litre barrels that have already held two to three wines, followed by four months of settling in stainless steel tank. This cuvée contains no added sulphur, during its time in barrel, we felt the wine was behaving beautifully in its natural state and could be left to evolve on its own. Bottled without fining or filtration.
