« Le Plaisir Léger »
This wine can be enjoyed on its own, without any food, a festive, aperitif wine, perfect for sharing with friends on a summer's day. It can be drunk at any hour of the day or night. It also pairs beautifully with seafood and oysters, much like a well-chilled Blanc de Blancs Champagne.
Vinification
Pétillant naturel method. Direct pressing followed by fermentation with indigenous yeasts in stainless steel tanks. A light earth filtration is carried out once the desired sugar balance is reached, so as to avoid disgorgement. Bottling takes place as soon as fermentation restarts after filtration. Fermentation finishes in bottle, laid on its side, followed by five months of ageing on lees.
