La Gouyate

« Exubérance et cocktail de fruits ! »

Served cool but not ice-cold (9–11°C), this wine plays between two sensations to keep you guessing. The nose is fresh and mineral, with hints of tropical fruit zest. On the palate, the attack is clean, tangy, round and generous, an explosion of fruit. A touch of honey-like sweetness marks the mid-palate, offering a glimpse of what this wine could be without the freshness that ultimately takes the lead on the finish, all while leaving a lingering impression of sweet fruit. It is precisely this freshness and length that make this wine so beautiful, and so hard to resist another sip (in moderation, of course). A loyal and ideal partner for your summer aperitifs, it pairs with everything from the classic peanuts, crisps and fresh vegetables with tzatziki, to more refined dishes such as foie gras (a perfect trio with onion chutney), Roquefort risotto or pork chops in cream sauce. It will happily follow you through to dessert, chocolate charlotte, mango soufflé, macarons or tiramisu. In short, the perfect companion from start to finish.

Vinification

Direct pressing in a pneumatic press, followed by fermentation with indigenous yeasts (as with all our wines) to preserve the character and originality of our terroirs. Vinification takes place in stainless steel tank. Once the desired balance between alcohol and residual sugar is reached, the wine is filtered and bottled immediately, there is no ageing in tank. This technique preserves the crisp, crunchy fruit character while also allowing us to keep SO₂ levels to a strict minimum with no risk of refermentation.
