« L’identité du fruit ou le Déménageur en talons aiguilles »

The colour is a dense, dark ruby verging on violet. The nose is explosive, with aromas ranging from liquorice and propolis to crunchy red berries. After opening up, blackcurrant takes over. On the palate, the profile mirrors the nose, fruit-forward, fresh and moreish. The finish is a reminder that we are in the South-West, but delivered with great elegance. The tannic structure comes to caress the palate, and the seemingly light aromatics from the nose are a distant memory. Larcin is something of a contradiction: it manages to be both a thirst-quencher and a wine of real character, with remarkable elegance. Think of it as a heavyweight in stilettos. An ideal companion for almost any occasion. It pairs beautifully with the most refined dishes, duck breast with plum sauce, for instance, but equally with simple grilled meats. The most important ingredient, however, is good company.

Vinification

Carbonic maceration for a week for some batches, a mix of whole bunches and destemmed grapes for others, it all depends on the fruit and the vintage, but Larcin is predominantly a whole-bunch wine. After fermentation, the wine is aged in a wide variety of vessels, amphorae, barrels, egg-shaped tanks, stainless steel, for around 10 months. It is then bottled without fining, filtration or added sulphur.
