« Exubérance et cocktail de fruits »

Its colour is a surprise, golden, almost amber, like that of a wine twenty years its senior. The long, slow fermentation of this dessert wine gives it a full nose where honey, beeswax, candied fruit and fresher notes of white blossom all intertwine. The palate is generous, silky and round, yet retains an acidity that lends it lightness, the hallmark of a fine balance between richness, sweetness and finesse. The ageing potential is immense: our dessert wines can be enjoyed young, for the freshness and crunch of the fruit, or much older — 15 to 20 years on, when more complex, concentrated aromas of maturity emerge. Served at 7–8°C, it can be enjoyed as an aperitif, with foie gras, white meat dishes such as a chicken blanquette, or even a lamb tagine. It also pairs wonderfully with blue cheeses (Roquefort), red fruit desserts, or sweet-and-savoury dishes such as pork with pineapple or duck à l'orange.

Vinification

A selection from our finest and highest limestone hillsides. Only 100% botrytised grapes are harvested. Long pressing cycles of five hours. Fermentation carried out solely by the yeasts naturally present on our grapes (indigenous yeasts), over the course of 12 months, following the rhythm of the seasons. The alcohol-sugar balance is achieved naturally, with no chaptalization or fortification. Only a light filtration is carried out before bottling.

We do not qualify for the Monbazillac AOP, which requires a minimum of 12° alcohol. Our wines ferment naturally to just 10.5°, so they are classified as Vin de France.
