« Un cocktail surprenant »
The first orange wine from Barouillet, made from indigenous grape varieties and inspired by ancestral Georgian winemaking methods. On the nose, citrus takes centre stage, lemon zest, persimmon, leaving just a whisper of more earthy, almost camphor-like aromas. The palate is fresh, dry, grainy, deliciously rustic and full of verve. The fine tannins make your mouth water, calling for a second swig. Its bold character calls for cheese, particularly hard varieties, and it is also an ideal companion for exotic dishes such as tagines, especially those with citrus peel or dried fruit.
Vinification
Harvested on the same day, the Muscadelle, Chenin and Ondenc are destemmed and placed together into terracotta amphorae, where they macerate for three to five months. They are then aged in the same vessels for a further six months before bottling without any additives or intervention.
